Appetizers

Estimated time:
30 min.

Ingredients: (Hit your return key to start a new line)
2 mangos, ripe but firm

1 1/2 c. chopped bell pepper (both red and green is pretty!)

partial to full 4 oz. can diced jalapeno peppers

4 green onions, sliced up, incl. part of tops

1 tsp. salt

1/2 tsp. pepper

--------------------------------

Other potential addition(s):

seedless grapes, halved

diced fresh melon (cantaloupe, honeydew)

diced fresh peach

fresh strawberries, halved

other berries

small chunks o' pineapple

seedless orange, peeled and sliced crosswise

Directions:
Peel the mangoes; cut the flesh away from the pit. Dice, and place in a bowl. Add pepper(s), onion, and seasonings; gently blend with a spoon.

Other ingredient(s) may be added, for color and flavor variations.

Refrigerate for 1-3 hours before serving, so flavors may mingle.

Other suggestions and comments:
While this makes an interesting dip for tortilla chips, it should really shine as a condiment for meats and seafood, especially items grilled to perfection, outdoors!

Put a rice steamer to work, and dinner's going to be great tonight.
