Cranberry Bars

Estimated time:
45 minutes-one hour, plus cooling time

Number of servings:
3-4 dozen bars

Ingredients: (Hit your return key to start a new line)
1 c. softened butter

3/4 c. sugar

3/4 c. brown sugar, firmly packed

2 eggs

1 tsp. vanilla

2 1/4 c. flour

1 tsp. baking powder

up to 12 oz. white chocolate chips

up to 2 c. sweetened dried cranberries/"craisins"

1 c. chopped nuts (walnuts, almonds, macadamias, whatever;-)

Directions:
Combine butter and sugar(s) in a large mixing bowl. Beat on medium speed until well blended; add eggs and vanilla and beat well.

Combine flour and baking powder; gradually add to mix. Add white choc. chips, cranberries, and nuts; stir until thoroughly combined.

Spread dough evenly in a greased "jelly roll" pan (15" x 10" x 1").

Bake in a preheated oven at 350 degrees F. for 20 minutes, OR until Light Golden Brown. Do not overbake, but a knife inserted in center should emerge Clean. Watch the bars toward the end of the baking time; butter can brown quickly.

Other suggestions and comments:
I ended up turning off the oven and letting the bars "set up" as the oven cooled off.

You can substitute margarine for half the butter, but Please be sure not to use a dietetic/water added product!

The cookies are supposed to freeze well; I froze half. I need to leave them in the freezer until I can Share them, 'cuz they are verrrry good! Very sweet, and very fruity. Perfect for tea and coffee with friends in autumn, or during the holidays.

This recipe is about 98% from a recipe I found off a bag of dried cranberries found at WalMart. A Big bag, weighing in at 30 ounces. I thought they were nice and tangy; perhaps a little more Moist than we're used to.

The bars taste fabulous while still warm, but they tend to fall to pieces easily, until fully cooled.
