Ingredients: (Hit your return key to start a new line)
one box of brownie mix
(eggs, oil, and water as specified on box)
one bag of mini peanut butter cups (13 oz.)
OR
one bag of "Hugs" white chocolate candies
*mini-size Baking and Party cups, and corresponding pan(s)
Directions:
Preheat oven to 350 degrees F.
Mix the brownie batter according to package directions. (Basic recipe, not the egg-ier, cake-like version.)
Place the baking cups into mini muffin cups (or close together in a cake pan, so each supports the liner next to it).
Carefully drop very rounded spoonfuls (I used a long-handled iced tea spoon) of batter into the cups.
Press a peanut butter cup ("peeled") into each brownie cup.
Bake for about 12-15 minutes. The top surface of the brownie should look a bit dry/crackled, and the peanut butter cup will look on the verge of melting.
Remove from oven and cool completely before taking out of the pan(s).
Other suggestions and comments:
My sister-in-law made these one Christmas, and sent them in cute, inexpensive, plastic, holiday-type containers. They traveled well across several states, arriving unbroken, with good flavor and texture. They would make a nice, easy gift for any occasion when Chocolate rules (actually, when is a bad day for chocolate? ;-)
My sis-in-law's came out slightly different; hers were all brownie-ish on top, and the peanut butter kiss is "buried" in the middle, like a surprise.
To get that effect, the candy would have to be placed in the bottom of the cup first, vs. pushed in after the batter's in there. People who have food allergies are not very fond of surprises, and peanuts are a Biggie in the allergy category, so I like to place the peanut butter cup visibly Topside.
Similarly, a "Hug" candy can be pressed into the brownie cups either pointed side up, or down, depending on whether you are trying to hide it a bit, or have it centered. (Kisses tend to firm up if they sit for a good long while; Hugs remain a bit softer).
Whichever candy you choose, and however you tuck 'em in, they turn out pretty good! Not quite photograph-pretty, but darn good chocolate fix! The container they are placed in can make up for their simplicity.
*If you don't happen to have the itty bitty muffin tins, and snug the liners into a cake pan, they will flatten ever so slightly, but chances are nobody but the cook will notice or care. In fact, I think the ones my sis-in-law sent were a li'l bit flat like that; she was in Quantity Production mode, making holiday gifts.
I used some heart-decorated paper liners, but truthfully, the plain ones would be just as good. Once they are baked, the decorations on the liners are rather hard to notice much (because of the dark brown coloration). Plain liners would be just as fine, and probably cheaper.
I used a store-brand brownie mix, vs. national brand, and that, too, worked out OK. It was what was on the shelf ;-)
